Brothers Jonathan and Justin Petruce and Partner Tim Kweeder to Open Petruce et al

Brothers and co-Executive Chefs Jonathan and Justin Petruce are thrilled to announce that they will debut their inviting new restaurant and bar, Petruce et al. (1121 Walnut Street, 267-225-8232), in February.  Working closely with partner, general manager and wine director Tim Kweeder and beverage director George Costa, Justin and Jonathan look forward to bringing flavorful, authentic cooking and artful wines and cocktails to the city’s vibrant Walnut Street corridor.

 

The restaurant’s dinner menu, served nightly, will focus on bringing forward the natural flavors of seasonal ingredients using the kitchen’s centerpieces, a wood-burning oven and Argentine-style grill, and will be complemented by a diverse list of natural wines and seasonal cocktails from Kweeder and Costa, two of the city’s leading beverage experts.  The bi-level, 70-seat restaurant’s rustic aesthetic, with custom-built accents from local carpenters and exposed industrial elements, suits the landmark, centuries-old building.  Brick and steel throughout the main dining room and bar area will set a dramatic scene for the exceptional food and drink.

 

“We couldn’t be more excited to announce our partnership with Tim, whose front-of-house leadership and wine expertise make him a compelling addition to our team,” says Justin.  Adds Jonathan, “Cooking together in our own restaurant has been a dream of ours for years, and partnering with our friend Tim makes it even sweeter.”

 

To accompany Justin and Jonathan’s menu, Kweeder will curate an impressive list of wines, with a focus on natural-production selections from organic and biodynamic wineries from across the globe, both by the glass and by the bottle.  His experience at some of the city’s top wine bars, including a.kitchen and a.bar, and his ongoing work with Moore Brothers Wine, will inform his selections and ensure that the list is among Philadelphia’s most interesting and of-the-moment.  A seasonal selection of cocktails, crafted by Costa, will also be updated frequently, drawing from his standard-setting beverage program at Southwark and more recent experience at the helm of the bar at Pub & Kitchen, where Philadelphia magazine named him “Best Bartender” of 2012.
